Morning Flaxseed Muffins

I was searching the internet, hoping to find a different muffin recipe – one that was unique and I had never attempted before. Well, I found it! Of course, I modified the recipe due to either lacking ingredients (I’m trying to be very conscience and use up what we have before purchasing more) or knowing what my family prefers. The original recipe can be found on the website Venison for Dinner (My Mama’s Mama’s Bran Muffins).

This recipe is quick and easy to make for a morning treat and the best part, my kids loved it!

Morning Flaxseed Muffins

Prep Time: 15 minutes

Cook Time: 20-22 minutes

Total Time: 35-37 minutes


1 cup of butter

1 1/2 cups of brown sugar

2 cups of molasses

2 eggs

2 cups of heavy cream

2 ¾ cups flour

2 tsp baking powder

2 tsp of baking soda

¼ tsp salt

2 cups of flaxseed (flaxseed and bran have a 1:1 ratio – so, you can substitute for bran)

1 Tbl chia seeds

Preheat oven to 375 degrees

Cream the butter and sugar. Add the molasses and eggs (one at the time). Add the milk and stir until it is well-mixed. In a separate bowl, mix the flour, baking powder, baking soda, and salt. Add the dry ingredients to the butter and sugar mixture and stir well. Add the flaxseed and chia seeds to the sugar mixture and combine well. Fill muffin tins with papers. (I use parchment muffin holders; these can be composted after.) Bake muffins for about 20-22 minutes, depending on your oven. Makes 24 medium size muffins.
