Roasted Herb Brussels Sprouts

Enjoy this easy vegetable side dish. It complements a variety of entrees!


1 lb of brussels sprouts (homegrown are the best!)

Olive Oil, 1/4 cup

Herbs, to preferred taste

Dried Tomatoes, 1 Tablespoon

Salt, pinch

Balsamic Vinegar, 1/4 cup

Cut brussels sprouts into quarters. Mix the brussels sprouts in a bowl with 1/4 cup of olive oil, a pinch of salt, dried tomatoes, and a combination of your favorite herbs. (I combine my own Italian herb mix: oregano, basil, dill, garlic powder, and onion powder.) Cover a cookie sheet with parchment paper and place the brussels sprouts evenly on the pan. Drizzle a 1/4 c. of balsamic vinegar over the brussels sprouts. Preheat Oven to 375 degrees. Bake for 18-20 minutes. (Our family prefers crispy brussels sprouts, so I bake them for 20-25 minutes.)
