This is a family favorite – baked oats. It’s a different take on oatmeal, but the kids find this more interesting than just a bowl of oatmeal. The great part is that ingredients can easily be added to this recipe to spice it up. I originally found a recipe on The Quick Journey and I’m linking it here. I have adjusted that recipe to fit our family. You just need a good “base” recipe before making adjustments.

Overnight Oats
3 large eggs
¼ cup of maple syrup
1 tsp of baking powder
1 tsp of vanilla
2 tsp of cinnamon
1/3 c of coconut oil
¾ cup of applesauce
1 cup of almond milk
3 cups of rolled oats
1 1/2 cups of raisins
Combine the liquid ingredients in a mixing bowl. Add the oats and raisins. Mix. Add the baking powder and the cinnamon to the wet ingredients and mix. Pour mixture into a greased pan. Push down the oat mixture, so the top is flat. This can be refrigerated overnight, if covered with saran wrap. Oftentimes, I don’t refrigerate it and just bake it right away. 350 degrees for 30 minutes. Enjoy!
