Roasted Herb Brussels Sprouts

Enjoy this easy vegetable side dish. It complements a variety of entrees! Recipe: 1 lb of brussels sprouts (homegrown are the best!) Olive Oil, 1/4 cup Herbs, to preferred taste Dried Tomatoes, 1 Tablespoon Salt, pinch Balsamic Vinegar, 1/4 cup Cut brussels sprouts into quarters. Mix the brussels sprouts in a bowl with 1/4 cup of olive oil, a pinch of salt, dried tomatoes, and a combination of your favorite herbs.
